Avocado BLT Grilled Cheese (Printable)

A decadent twist on the classic BLT with crispy bacon, fresh lettuce and tomato, creamy avocado, and gooey melted cheese.

# What You Need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper, to taste

# Directions:

01 - Cook bacon slices in a skillet over medium heat until crispy, approximately 5-7 minutes. Transfer to paper towels to drain excess fat.
02 - Lightly butter one side of each bread slice with softened butter.
03 - Place two bread slices buttered side down on a clean surface. Layer each with one slice of cheese, bacon, lettuce, tomato, and avocado slices. Season avocado and tomato with salt and pepper to taste. Top with remaining cheese slices, then place remaining bread slices buttered side up to complete each sandwich.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place assembled sandwiches in the skillet and cook until bread is golden brown and cheese is melted, approximately 3-4 minutes per side, pressing gently with a spatula.
05 - Remove sandwiches from skillet and let cool for 1-2 minutes. Slice each sandwich in half diagonally and serve immediately while warm.

# Expert Hints:

01 -
  • It turns a simple grilled cheese into something hearty enough to count as dinner without feeling too heavy.
  • The creamy avocado balances the crispy bacon in a way that makes every bite feel indulgent and fresh at once.
  • You probably already have most of the ingredients, and it comes together faster than ordering takeout.
02 -
  • Don't skip letting the bacon drain, the extra grease will make the sandwich soggy and overwhelm the other flavors.
  • Use medium-low heat, not medium or high, or the bread will burn before the cheese melts and you'll end up with a disappointing sandwich.
  • Season the avocado and tomato directly, because the cheese and bacon are salty but the vegetables need their own boost to shine.
03 -
  • Press gently with the spatula while grilling to help the cheese melt and the layers meld, but don't smash it or you'll squeeze out all the fillings.
  • If you're making more than two sandwiches, keep the finished ones warm in a low oven while you cook the rest so everyone eats at the same time.
  • Slice the sandwich with a sharp knife in one clean motion to avoid dragging the fillings out or tearing the bread.
